Down home recipes with Pat Neely: Festive chocolate peppermint brownies

Celebrity chef, restaurateur and barbeque king, Pat Neely, shares his recipe for festive chocolate peppermint brownies:


“One of the great things that I love about partnering and working with Family Dollar is the fact that not only can you go get fantastic products and they’re convenient and the value is there, but they also have the giving spirit and this time of year is all about what can you give back. For your holiday, you are going to have a tasty treat dessert and I got one for you guys. We’re going to make a chocolate peppermint festive brownie y’all.


So, I’ve got my sugar going in my bowl, we got our cocoa going in. I got one stick of melted butter going in with my cocoa and my sugar; super easy, were going to give this a quick stir. So we got this all mixed. Of course, anytime you’re making a great brownie you’ve got to have eggs, so were just going to pop two eggs in. We got a teaspoon of vanilla extract and we’re going to add in our family gourmet flour. We got a quarter teaspoon of baking powder; right in, and this great dessert can be prepared the day before, so I’m going to take a little cooking spray and spray my pan. And we’re going to come right into our pan and pop this baby in the oven for about 20 minutes

We have marshmallows as one of our toppings. I told you guys I got a real treat for you to top this brownie off. So we’re just going to evenly spread our marshmallows all over, then we got some chocolate chips. Pop this back in the oven so; we only want our marshmallows to become soft and gooey but we don’t want to burn them so we are going keep a close eye on them.


In my opinion to have a festive dessert you need chocolate and you need peppermint and I just got five candy canes at Family Dollar, chopped them up with a knife, run them through a food processor and look … that’s awesome right! So what we need to do is let this cool and then we are going to cut them up in little squares. We will probably take them in the living [room] and they’ll become a nice little treat for my guests.”
