Cocktail shots: Blue Hawaii jelly shots

To get you through your day, I found this cool recipe for Blue Hawaii Jelly Shots.  This is a cocktail that is transformed into jelly shot form. These shots are layered, but not to worry, they are easy to make. These will definitely impress your friends, not only through presentation but also taste!

Ingredients:

Blue Layer:
1/4 cup pineapple juice, strained (there should be no solids left over)
1/4 cup of vodka
1 envelope of Knox gelatin
1/4 cup of blue curacao liqueur
1/4 cup of coconut rum

Yellow Layer:
3/4 cup of pineapple juice, strained (there should be no solids left over)
1/4 cup of a lime juice of your choice
1 envelope of Knox gelatin

Prep:

Blue layer:

Combine the pineapple juice and vodka in a small saucepan.  Next sprinkle in the gelatin and let it sit for 2 minutes.  Set the heat on low and constantly stir until the gelatin is fully dissolved.  This step should take about 5 minutes.  Next, remove from the heat and stir in the curacao and rum.  Prepare silicone mold by spraying lightly with non-stick cooking spray.  Transfer mixture to the silicone molds and fill 1/2 way . Refrigerate about 30 minutes.

Yellow layer:

Combine the pineapple juice and lime juice in a small saucepan.  Next, sprinkle in the gelatin and let it sit for 2 minutes.  Set the heat on low and continue to stir until the gelatin dissolves completely.  Next, remove from the heat and allow to cool.  Carefully place the yellow gelatin mixture on top of the set blue layer.  Refrigerate until fully set.

When ready, unmold the shots and serve.  This recipe makes 18-24 jelly shots.
