RO Holiday Notes: Christmas Dinner with a Twist

There are certain traditional dishes that must make the spread at a holiday feast in an African American household. Despite abounding health warnings, Thanksgiving isn’t “Thanksgiving” and Christmas isn’t “Christmas” without dishes such as macaroni and cheese, cornbread stuffing, and candied yams.

True to form, those traditions were satisfied this go ’round at my family’s holiday celebration, but with a palate-pleasing twist.

To add to our normal holiday fare this season, our menu included a few things that bend some of the rules of “down home” cooking.

Here’s what we had:

Bone in Prime Rib
Cornish Hens basted in Marmalade and Stuffed with Oranges
Roasted Lobster Tails
Shrimp, Sausage and Cornbread Stuffing
Four Cheese Macaroni and Cheese
String Beans w/Garlic
Roasted Yams with Red Onions
Cranberry Sauce
Sister Shubert’s Yeast Rolls
Sparkling Cider and Champagne
Chocolate Butter Cream Cake

So, we were sure to observe the obligatory aspects of traditional black holiday dishes, but with tasty twists that allowed us to avoid a few health hazards. It was a welcomed break from the monotony.
