Chefs looking for inspiration will be blessed to get the advice from Chef Shane Michaels, personal chef to Gregg and NeNe Leakes. Below, he discusses his start in culinary arts and what he loves most about cooking. –Joi Pearson @joiapearson
How did you start cooking?
I started cooking when I was 4 or 5 yrs old; watching my grandmother and helping her in the kitchen was a thrill for me.
What do you love most about what you do?
I love to see people’s faces when they taste a good meal that I’ve prepared. I love the monetary payment but I swear to you when someone’s mouth drops because my food is just that good is almost as good as the money.
What advice would you give to up-and-coming chefs?
Stick with your passion and dream! I tell people all the time that the best investment you can make is in yourself.
How do you advertise?
A lot of my advertising comes from word of mouth. The Real Housewives of Atlanta helps but good food takes off like juicy gossip.
Consistency, no one wants to order something they like one day then a week later you make it and it looks different or more importantly it tastes different.
How do you set goals and evaluate your success?
I set high goals high. I reach for the moon and anything less reminds me I have a ways to go. I create a plan to continue my travels. As far as success goes, to me it’s not so much money as it is respect from others. I always want to be remembered for something special that helped others. I feed the homeless and mentor the youth because it’s important to me to leave a memory of community and global help efforts behind.
