Greg Gatlin never imagined his culinary journey would evolve beyond barbecue. What began as an 800-square foot restaurant in 2010 has blossomed into a Houston dining empire that celebrates both traditional flavors and innovative fusion cuisine. Today, Gatlin operates two successful establishments — Gatlin’s BBQ and Gatlin’s Fins & Feathers — that have become integral parts of their neighborhoods, drawing long lines of eager diners and transforming once-quiet streets into bustling culinary destinations.
The barbecue foundation
Gatlin’s culinary empire began with a simple vision: Serve exceptional barbecue in a modest setting. Gatlin’s BBQ, the flagship restaurant, started operations in a cramped space with a smoke room added to the back. The location, nestled on a quiet side street with mostly residential properties and a single bar called Cedar Creek, seemed unlikely to generate significant foot traffic.
However, the quality of the barbecue spoke volumes. Within months of opening, long lines began forming outside the small building. Passersby would drive by, wondering what could draw such crowds to this unassuming establishment tucked away from Houston‘s main thoroughfares.
The success transformed not only the restaurant’s fortunes but the entire neighborhood character. What once was a quiet residential area gradually evolved into a vibrant dining district, with bars and commercial establishments opening nearby.
Fifteen years later, Gatlin’s Barbecue continues operating at the same location, having become an anchor for the neighborhood’s culinary scene.
Expansion into Gulf Coast cuisine
By 2022, Gatlin was serving various non-barbecue dishes as specials at his original restaurant. The popularity of these Gulf Coast offerings sparked an idea: Create a dedicated space for this expanded cuisine.
Initially envisioned as fast-casual dining, the concept evolved as Gatlin realized his dishes deserved more sophisticated presentation. He didn’t want to dilute his barbecue restaurant’s focused identity by adding fish and chicken to that menu.
The planning process included research trips to New Orleans, studying diner and cafe establishments for inspiration. These visits provided the aesthetic foundation for Fins and Feathers‘ decor and overall atmosphere.

Fins and Feathers represents Gatlin’s philosophy of cultural celebration through food. The restaurant’s menu reflects Houston’s diversity, incorporating influences from African American, African Caribbean, Asian, and Japanese cuisines while maintaining Gulf Coast foundations.
This approach allows creative reinterpretations of traditional dishes from various cultures. Diners might encounter classic African American preparations with contemporary twists, or discover Asian-inspired ramen alongside traditional Southern fried chicken. “Just being in a city that has such a diverse culture, people and cuisines and all that kind of stuff, so we try to blend some of that stuff in with our specials,” Gatlin explains.
Despite international influences, classic dishes remain paramount. Traditional preparations receive the same attention to detail as innovative offerings, with every dish executed to evoke nostalgic memories and emotional connections.
Creating authentic dining experiences
Both restaurants center on creating authentic experiences that resonate emotionally with diners. Gatlin wants customers to feel the same satisfaction they might experience when eating beloved family recipes – that recognition and comfort of grandmother’s cast-iron skillet catfish or perfectly executed fried chicken.
Fins and Feathers was deliberately designed as an intimate 84-seat space. The smaller capacity ensures a cozy, home-like atmosphere even during busy periods, with background music contributing to natural conversations and genuine connections between diners.
The wine selection complements the diverse menu, offering pairings that enhance both traditional and fusion dishes. This attention to complete dining experiences reflects Gatlin’s commitment to hospitality beyond just serving food.
Gatlin’s restaurants have become neighborhood anchors, creating gathering places where relationships form over shared meals. The transformation around Gatlin’s Barbecue demonstrates how passionate restaurateurs can positively impact entire areas, generating economic opportunities and cultural destinations.
