Watermelon and Feta Salad

Ingredients:


  • 3 cups baby arugula, washed and dried
  • 3 cups of 2-inch chunks watermelon, seeded
  • 1 cup crumbled feta cheese
  • fresh coarse ground black pepper
  • 1/2 teaspoon red pepper flakes (optional)

Directions:

  1. In a large bowl, combine the watermelon, feta, and black pepper to taste
  2. Lightly toss
  3. Add red pepper flakes if you like.
  4. Serve immediately.

This recipe is also great with this vinaigrette by Ina Garten:


  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lemon juice (2 lemons)
  • 1/4 cup minced shallots (1 large)
  • 1 tablespoon honey
  • 1/2 cup good olive oil
  • 1 teaspoon kosher salt

Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
